The Château Single Vineyard Cabernet Sauvignon 2022

$40.00 / bottle

Selected from the finest 32 rows of Cabernet Sauvignon on our estate vineyard in the cool climate of the Eden Valley.

TASTING NOTES

‘The Château’ Cabernet Sauvignon displays deep, rich purple and red hues.

The bouquet has lifted aromas of blackcurrant, redcurrant and spice on the velvety smooth palate with hints of cedar and mint. The extensive finish is framed by elegant, fine-grained tannins from 18 months’ maturation in a combination of new and seasoned French oak barrels.

WINEMAKING

The grapes for this year’s The Château Single Vineyard Cabernet Sauvignon were grown on our estate vineyard in the cool climate of the Eden Valley.

The grapes are destemmed, but not crushed, and spend seven days on their skins in open fermenters with regular battonage to more gently extract colour, flavours and tannins. Following fermentation, the wine is carefully basket pressed prior to maturation in a combination of new and seasoned French oak barrels for 18 months.

Deep ruby red colour. Black fruits, black olive tapenade and nori aromas. Rich and dense dark fruits on entry then savoury ironstone and nori characters fill in adding character. Tannins are firm but work well to lengthen and dry the finish.

Raspberries, sliced chilies, smoked paprika and blackcurrant leaves on the nose. Fruity and full-bodied, with relatively supple tannins and good freshness. Drink now.

It’s funny how just one sniff of a wine can send you off on a journey. The scent of turned earth, charry smoke, field herbs and fruits, and suddenly I’m walking down a country road in the Eden Valley. The only thing missing is the smell of eucalyptus. If this young single vineyard Cabernet smells like a walk in the country, it boasts the taste of the country, too. The fruit is sweet and brimming in red and black fruited flavour nicely intertwined with herbs, baking spices and mocha chocolate. Friendly and approachable through and through with gentle tannins presiding. All round good drinking pleasure now, and there’s plenty of energy for further ageing in the bottle.

Stylish and complex, the bouquet shows blackcurrant, smoky bacon, olive and roasted nut aromas, leading to a wonderfully weighted palate that's succulent and finely textured. Tannins are fine and chalky, framing the wine beautifully with a persistent sturdy finish. At its best: now to 2037
