Matthews Road Cabernet Sauvignon comes from both the Coonawarra region and the Barossa Valley.
Tasting Notes
A concentrated wine with the expected regional characteristics of mint leaves and ripe dark forest berries on the nose. Well framed tannins and acidity balancing with the subtle toasty oak towards a lengthy finish.
Winemaking
The grapes are destemmed, but not crushed, and spend seven days fermenting on their skins in open fermenters for more control of each single parcel of grapes. We undertake hand plunging at least twice daily during ferment to more gently extract colour, flavours and tannins.
The wine is then carefully pressed for a gentle extraction, and soft mouthfeel to the finished wine. It then undergoes malolactic fermentation in barrels, before being transferred to a selection of new and seasoned French and American oak to mature for 12 months.
