Tasting Notes

Displays lifted aromas of blueberry and plum supported by juicy dark berry fruits and chocolate on the palate. The extensive finish is framed by elegant, fine-grained tannins from 15 months’ maturation in a combination of new and seasoned French oak barrels.

Winemaking

Fruit for the Dahlitz Merlot comes from a single vineyard at the heart of the Barossa Valley’s Tanunda sub-region. The grapes were grown by Barossa Vigneron of the Year (2013) Sam Dahlitz.

The grapes were destemmed but not crushed and spent seven days on their skins in open fermenters to gently extract colour, flavour and tannin. Twice daily hand-plunging prior to careful basket-pressing have made a full-bodied wine.
