Tasting Notes
The Barossa Tower Shiraz has rich, ripe plum and liquorice flavours. It is fresh and luscious with plenty of upfront fruit flavour and persistence. The palate is dense and layered, with firm oak tannins to close. Beautifully balanced tannins derived from twelve months in French and American oak compliment the luscious fruit and mouth feel making this a very approachable style.
Winemaking
The grapes were destalked (separating berries from the bunch) and placed uncrushed into small stainless steel open fermenters. A cultured yeast was used to start the fermentation and the tanks were hand plunged spending 7 days on skins at 28° C. The skins were gently pressed in the JLB Vaslin Bucher press and the wine spent 12 months in French and American oak hogsheads (300l).
