Lifted aromas of blackberry, black cherry and raspberry are accompanied by spicy, dark berry fruits and white pepper on the palate. The finish is long with fine-grained tannins from fourteen months’ maturation in a combination of new and seasoned American and French oak barrels. Although drinking well now this wine will benefit from medium-term cellaring.
The grapes were destemmed but not crushed and spent ten days on their skins in open fermenters to gently extract colour, flavour and tannin. Each parcel is fermented separately and gently basket pressed prior to 16 months maturation in a combination of new and seasoned American and French oak barrels.
